Total beginner looking for a camera for roughing it (interchangeable lenses?).

I already have a pretty simple point and shoot camera, but I often find myself in situations such as spotting an animal that is too far away for my 4x zoom or trying to take a picture of an expansive landscape but only getting a fraction of the view I want. I want to know: which kind of lenses could I be using to to fulfill those needs, or if I really need more than one lens?
